So a little off track today but I wanted to share with you this home made pizza recipe. I as a rule don’t like takeaway or bought pizzas – too greasy and the cheese if never right. I thought making pizza would be really hard but actually it’s so much easier than you would think! I made this last night and enjoyed it with a salad and glass of wine in my back garden (thanks to a mini uk heat wave!).
So here we go – I divided it into 3 sections – the sauce, the base and the topping
For the pizza sauce – this makes enough to top two pizzas because whenever I make this I make double and so i can freeze half ready for next time 🙂
Two cans of tinned chopped tomatoes, 1 large white onion, 2 garlic cloves, 10 basil leaves, blob of tomatoe purée, pinch of sugar and some salt and pepper.
Fry off the onions and garlic gently for about 6 minutes
This can then be left until needed – like I said it freezes fine and will be ok in the fridge for 12 hours covered up.
The base – this makes a base that is enough for two people
225g (8oz) strong white bread flower, 1 tsp salt, 1/2 tsp rapid rise yeast (in the supermarket next to the bread flour), 1tbsp olive oil, 150ml of warm water
Mix all the ingredients into a bowl and knead for about 10 minutes (great work out for the arms) until it looks like this:
Cover and pop in a warm place for 10 minutes (it will double ish in size)
Then knead this for another 5 minutes and roll out to size – you can cook this on a baking tray or I prefer the pizza trays because they have the air holes so the base is never soggy!
I have used bacon, mozzarella and basil leaves as my topping :
But you can used cooked ham or chicken. Also Parma ham, mozzarella and rocket is lovely (don’t cook the rocket though, put it on at the end!)
Assemble the pizza sprinkle with a little Parmesan, black pepper and a drizzle of olive oil and cook at gas 7 (220) for 15 -20 mins
